For 20 Units:
Butter for greasing
Flour for dusting
5 egg whites
200g sifted icing sugar
Preheat oven to 150 degrees. Grease a baking tray with butter and sprinkle with flour. In a bowl, form soft peaks with the egg and gradually incorporate the sugar, stirring.
Transfer a little of the meringue to a pastry bag and form circles of 1 cm thick on greased tray.
Lower the oven temperature to the minimum and bake the meringues between 30 and 40 minutes without letting them brown. The meringues should not be fully cooked, only dry.
