5 tablespoons olive oil
1 dash of tabasco
600g salmon fillets, cubed
2 yellow peppers, seeded and diced
50 g of capers, drained and rinsed
8 green olives, pitted and chopped
4 egg yolks
Salt and pepper
Chopped parsley for garnish
Peel a lemon, remove the white part of the peel and chop the pulp. Squeeze the other 2 lemons.
In a bowl, mix oil, lemon juice and Tabasco. Season.
Mix salmon, pepper, capers, olives and lemon pulp in a bowl.
Add the seasoning to the bowl, mix well and marinate 20 minutes.
Distribute the ingredients on to 4 plates and place 1 egg yolk in the center of each.
Garnish with chopped parsley and serve.
