Serves for 4:
Preheat the oven to 200 ºC.
Grease an oven dish with butter and add the slices of monkfish.
Sprinkle them with the lemon peel, the shallots and the parsley.
Add two tablespoons of olive oil and the wine, salt and pepper. Bake for 30 minutes.
Chop the anchovies fillets, put them in a bowl and mash them with a fork.
Squeeze half a lemon and strain the juice.
Peel hard-boil eggs and cut them in half lengthwise.
Separate the yolks and put them with the lemon juice and the mashed anchovies.
Mix well and add olive oil slowly, stirring constantly. The sauce should be thick enough.
Place de monkfish in a hot serving dish and garnish with the anchovy sauce.
Serve it with steamed potatoes.
