For the dressing
Distribute the chopped lettuce and arugula on four individual plates. Arrange the goat cheese cubes decoratively on top.
To prepare the dressing , mix the vinegar with the oil in a small bowl. Season with salt and pepper, add the grated ginger and mix well. Drizzle the salad with dressing, garnish with cranberries, currants, pistachios and pine nuts, and serve immediately.
