Clean the pumpkin and remove the pulp with a spoon.
Chop the shallot and stir gry it with olive oil and the clean prawns’s tails in a casserole.
Add the rice and let it cook for a few seconds. Add the pumpkin pulp and the chicken stock and let it boil gently until the rice is almost done.
Add the butter and the parmesan, check the seasoning and let it rest covered for a minute.
Put the rice inside each half pumpkin and decorate with chopped pasrsley.
