Butter for greasing
4-6 clean Treviso chicory
Olive oil for spreading
250-500 g puff pastry, thawed if frozen
Four for dusting
1 egg yolk
Salt and pepper
Preheat the oven and stovetop to 180 degrees Celsius. Grease baking tray with butter.
Spread the chicory with olive oil and roast on the grill or stovetop until they acquire a slightly wilted appearance. Season.
Roll out the pastry puff on a floured or glass surface and cut into rectangles (one for each chicory). Place a chicory in each rectangle and wrap it with the pastry.
In a bowl, whisk the egg yolk with 1 teaspoon of water and coat pastry puffs with mixture.
Place in a tray and bake for 15 to 20 minutes, until golden brown.
