In the world of pizza, one of the best known and loved is the Marguerita pizza. But what few people knows is that this recipe of pizza takes the name of the Italian Queen Margherita of Savoy.
Legend has it that the Italian unification recently concluded, in the last quarter of the nineteenth century, southern Italy was still offended from losing their independence. It was then that the king and queen were visit to Naples in order to harmonize the tension with the citizens of the south.
During this trip, the queen asked for the best chef in Naples, tired of gourmet French food, which were the usual royal delicacies then. The sovereign asked the best pizzaiolo Raffaele Esposito to prepare three types of pizzas. It seems she fell in love with the tomato sauce, mozzarella and basil leaves.
As a result of this experience, Naples cook named it this recipe with Queen’s name. Days after Queen Margherita sent a note of thanks to Esposito, which today can be seen in the Pizzeria Brandi, nowadays it managed by descendants of Naples chef.
Maybe you notice that the colors of the pizza Margherita match with Italy flag: red, white and green. All this suggests that it was a gesture of acceptance from the monarchy to the south and their culture, and, in the same way, the southern citizens accepted the unification.
Obviously, this is the result of a legend tinged truthfulness. And after an investigation in the archives of Naples, apparently dates, documents and history do not match with the reality.
