Like love, beauty is simple. For me, the table presentation is a general concept which is not only concerned with the clarity, freshness and cleanliness of the table as an isolate object, but with the surrounding ambience also. I love a dining room that smells good. In the kitchen I usually open the window to get rid of the odours of fried food or chopped onions (talking about onions: always put the peel and the leftovers in a plastic bag before throwing them away… otherwise your dustbin will smell like hell).
In addition to that, I prefer the use of simple china which does not distract the attention from the food. A general harmonious effect can be obtained, also, if we can help mixing different china or glasses. Regarding the latter, it is important if they are beautiful, since we use them to make a toast to the good things in life and to our good friend Dionysus, who apart from being the God of wine is also the God of the Mysterious. Another useful tip is to try to avoid plastic bottles on the table, I normally pour the water in a jug and it even tastes better.
I also try to avoid noises that can disturb the conversation, like the so fashionable background music. What for? At the end you are not even able to hear it unless you put the volume up and, at this stage, the only thing you can do is to shut up completely. And what about the TV? It is the best way to hinder any communication, unless there is an exceptional program that all the family likes.
When you really take care about all the previous aspects, you are showing your respect for the people you receive in your house or restaurant. This is how we think and that is why in our restaurants, with the help of my wife Giuseppina, a clean and appealing line is always followed, arranging every detail with love and producing and invisible magic that makes us all feel welcome and happy.
On the whole, although it is essential to take care of details you should not exaggerate. It is not necessary to change plates and cutlery for every crumb if you are at home, but you have to take care of the flavours. For example: fish and meat do not mix well, as many other ingredients.
Paper napkins are useful, of course, but in some special occasions it is nicer to use proper cloth napkins. Do not forget to put salt and pepper on the table as somebody is always looking for the salt. All these details contribute to a feeling of well-being.
