With the arrival of autumn, the usual market stalls offer their customers chestnuts and it flood of the characteristic aroma of this fruit when being roasted.
This time we bring you this product with a recipe about a sweet Italian that is based on this autumn food, and it is as well as 100% gluten-free, suitable for coeliacs and even for diabetics, because it takes no sugar. And yes, it is still a sweet!
Castagnaccio is a kind of focaccia, bread or cake that comes from the regions of Tuscany, Piedmont, Emilia-Romagna and Lazio. The basis of this recipe is the chestnut flour, and to this add water, olive oil, pine nuts and raisins. Easy, right?
Curiously, in other areas of Italy receives other names like Baldino, Patona or ghirighio. It is a sweet with a poor rural past, when our ancestors cooked with own food from each station without frills or embellishments.
This sweet chestnuts based usually accompanied with ricotta cheese or honey, free to choose the level of sweetness by consumer. It can be taken as breakfast or snack, or to conclude a strong lunch, paired with a sweet wine or vin santo, another typical product of Tuscany.
300 g of chestnut flour
600 ml of water (perhaps less depending on flour)
1 tablespoon extra virgin olive oil
1 sprig rosemary
75 g raisins
50 g pinions
5 peeled walnuts, broken into small pieces (optional)
Half orange zest (optional)
Preheat oven to 200 ºC.
The first is to mix the flour in a bowl, along with the warm water and stir until you have a rather pasty dough, not too liquid, and avoid making lumps.
To this paste, add the olive oil, pine nuts, walnuts, raisins and orange zest, if you want, mixing well.
After put everything into a greased baking dish with butter or oil, about 25 centimeters in diameter. The extended dough should have a centimeter thick.
Top with rosemary leaves or twig directly, as decoration on the dough and place in preheated oven for half an hour to 180ºC. Castagnaccio bake at 200 for 30-40 minutes, until we see that on the surface cracks begin to form.
