Although its name is associated with the city of Bologna, the relationship between the two does not occur until the Middle Ages when the French started serving this Italian dish on a regular basis, even in more humble houses.
Although today it's a sauce made to accompany pastas such as tagliatelle and tortellini, the original idea of this dish was a meat stew, which was important. Throughout the years, the recipe has been modified, but traditionally the meat was first cooked in milk to soften.
This recipe is so honored that in 1982 , the original recipe was registered before a notary to help keep this gastronomic delicacy as authentic as possible.
